Aviation is an American gin that is distilled using a proprietary maceration recipe that produces a pure medley of botanical flavor. The gin takes a Dutch style rye spirit base combined with juniper, lavender, anise, sarsaparilla, orange peel and cardamom, and the botanicals are steeped in grain spirit for 48 hours before they are redistilled. This is, unsurprisingly, excellent in an Aviation cocktail, but also works well in a Martini and a G&T.
